Please carry on as follows:
- enable advanced logging under Help and support -> Technical support
- run update
- stop logging
- collect logs with ESET Log Collector and upload the generated archive here.

It only has occurred 1 time so far, and has updated after that appearing in the logs , so i'll wait and see if it happens again,

Marcus Which logging options are relevant  in the log collector, to keep the file size low just the eset related logging?

You can keep just advanced update engine logging enabled, however, it may not be enough, depending on the cause.

Did you try version 8.1?

Only Endpoint Security is v8.1. The OP has the latest version of ESET Server Security installed (v8.0.12003). The next version will address an issue with http mirroring in case of cascade mirrors which might resolve OP's issue.
