Windows Defender is active despite installing eset endpoint security

hi marcos I have installed antivirus, some exception files are deleted by Windows Defender,

This is a big problem if the Defender has to be turned off

Clears excluded files

What should be done?

It is the role of the operating system to turn off Defender when a 3rd party real-time AV protection activates. Do you have Windows 10? Is Windows reporting ESET as the AV provider?
