I am not able to add additional files to the file exclusion.  It is greyed out.  Once I go into the settings and  click on override policy, I am able to add files/folders to the exclusion list but as soon as the override policy option is deactivated, the files that I added are gone.  I am logged in with an administrator account.

You can control a particular setting (exclusions) either via a policy or by user. Policy overriding is only temporary. There's a chance that this will be improved in ERA / Endpoint v7 but I can't confirm it now.

Can you provide instructions or link on how to change It via policy?

Basically, you have to go do "ADMIN" section in ERA, menu item "POLICIES" and then create a "NEW POLICY" for "ESET FILE SECURITY FOR WINDOWS V6". There under "ANTIVIRUS" is part for "exclusions". You can exclude threats by path, or by name. When excluding by name, you have to add @NAME= before the actually reported threat name.
