Can we configure Email alert for any software installed on client

Can we configure Email alert for any software installed on client, like if someone installed  microsoft office, anydesk etc.

No, there is no such feature. While the management agent can report installed 3rd party software, Endpoint doesn't monitor the system for installed software.

You can enable reporting through an agent policy:

mentioned policy will just show alert on client and web console? or it can forward alert by email.

The policy will enable reporting of installed 3rd party applications to ESET PROTECT. You can use this information in reports for instance.
