(14h - CEST (UTC/GMT +02:00) Thus, there is one less update on the day between Monday and Friday (than it used to be) exactly around 2 p.m (14h - CEST (UTC/GMT +02:00) Why is that so?

Plus there are pico (streamed) updates that you receive every few minutes.

Nevertheless, you still receive pico (streamed) updates in a few minute intervals.

Moreover an FP issue had to be addressed as well https://forum.eset.com/topic/43420-is-this-false-positive-microsoftedgeupdatesetupexe-supposedly-infected-with-lummastealer/ The issues have been resolved, so the updates should continua as usually today.
