When I install ESET on the endpoint, it opens the first time, takes the license and everything, but when I restart so that it can take the updates correctly, it does not open again nor does the icon appear in the taskbar. But the process continues running and consuming resources, what could it be?

Please delete HKLM\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\StartupApproved\Run\egui in safe mode.

Also please make sure that Windows Defender is not enabled via a domain policy as you have its process running:

Servicio Antivirus de Microsoft Defender, c:\programdata\microsoft\windows defender\platform\4.18.24040.4-0\msmpeng.exe, Automatic, Running, , Antimalware Service Executable, Microsoft Corporation
