What will still work after trial expire?

I use smart security premium trial.

I know i wot get any updates, but does stuff like firewall or webcam permissions for programs still work?

Will scan still detect old viruses?

As you know that you will not receive any more updates, moreover, the protection will only happen with old malware, since nowadays thousands of malwares are created a day, so your pc will be unprotected quickly after your base is not updated.
The other resources as you mentioned above, will work but will also have their validity as eset develops resource improvements and corrections for each module that makes up your product.
If malware catches one of these product flaws, you are at serious risk.
