For "ESET Endpoint Antivirus for Linux", you can export/import the configuration settings using:

  /opt/eset/eea/lib/cfg --export-xml=/tmp/export.xml    #Export configuration (get    configuration)
  /opt/eset/eea/lib/cfg --import-xml=/tmp/export.xml    #Import configuration (update configuration)

Where is the documentation for these XML settings?

The above command is just for backup purposes if you want to save current configuration and restore it at a later time or import the settings on another machine. For configuration, use ESET PROTECT as per https://help.eset.com/eeau/8/en-US/?configuration.html.
